What makes a traditional Paczki different from a regular filled donut?
A traditional Paczki is a richer, more dense, buttery dough. It has a higher fat content, which gives it a delightfully chewy texture.
Do you have any unique or Michigan-inspired Paczki flavors this year?
Ricotta!! We use a house made ricotta filling!
How do you achieve the perfect balance of a crispy outside and soft, airy inside?
Practice! Yeast dough can be fickle to work with and it takes time to perfect and recipe and timing.
What’s the busiest day for Paczki sales?
Fat Tuesday is the busiest! We offer both pre orders and walk-ins!
How many do you typically make for Fat Tuesday?
Last year we made about 1,800 paczki, with just 3 of us starting the day before and amazing friends and family volunteering to help us on Fat Tuesday.
Where did you learn to bake Paczkis?
Holly grew up in a traditional bakery known locally for their donuts. It was opened by her great grandparents and three generations worked there. There have been a lot of questions, family tips, and tricks along the way.
Do you use a family recipe or a traditional Polish method, and have you made any modifications over the years?
We use a traditional Paczki recipe we have tested and tweaked over the years to be made on a bigger scale.

t has Polish roots and is believed early on it was a way to use up ingredients before Lent.* For many, the tradition of eating one on Fat Tuesday continues today!
